Tender Juicy Pork Loin Roast

This is, without a doubt, the best pork loin recipe I have ever found. It is very easy to cook and it is extremely tender every time. It is a two-step process. You need to season it and leave it sitting for a little while. Then you brown it in a pan. After that, you will be adding a marinade and baking it. That’s it. Perfection.

I have had to change the seasonings because Tommy is not very fond of Paprika. So, I exchanged it for basil. But, if you don’t mind it, it is what it calls for.

I used to always get the 2-loin package at Publix, but I found that it is too much for us. So, now I have been getting a single loin. The measurements for the seasoning is still perfect just for one.

Tender Juicy Pork Loin Roast

Ingredients

Dry Seasoning:

    • 1 tsp Sweet Paprika (I substitute for Basil)
    • 1 tsp Garlic Powder
    • 1/2 tsp Onion Powder
    • 1/2 tsp Dried Thyme
    • 1/2 tsp Rosemary
    • Salt & Pepper to taste

    Wet Glaze

    • 4 cloves of Garlic or Garlic Powder to taste. (I found that 4 cloves is too much so I adjusted mine.)
    • 1/4 cup Honey
    • 3 Tbsps Soy Sauce (I use Organic)
    • 1 Tbsp Dijon Mustard
    • 1 Tbsp Olive Oil
    Tips
    • I make sure that I cut off as much fat as possible so it isn’t incredibly fatty.
    • I let the roast sit for a few minutes after I take it out of the oven and before serving.
    • I always use my Father-in-law’s cast iron skillets. They are from the 1960s. But, any will do.
    • Save the rest of the Wet Glaze and serve with the roast.

     

    Step by Step Instructions

    Step 1

    Season:

    Mix all the dry seasoning and cover the roast on all sides.

    Let it sit for a few minutes if you are not in a hurry. 

    Step 2

    I use peanut oil to brown the roast in. You might like another oil and that is OK.

    Heat up the pan real good. Add the Peanut Oil and heat up. Add Roast. Brown on all sides. 

    Remove from heat when it is all browned. 

    Turn Oven on to 375° F.

    Step 3

    Glaze:

    Move the Roast to a baking pan.

    Glaze thoroughly on the top and sides. I don’t usually do the bottom

     

    Step 4

    Bake:

    Make sure the oven is hot enough.

    Bake for 10-12 minutes. Depending on how large the loin is or if you are doing 2.

    I take one out and test it by cutting a little into it in a hidden area.

     

    Step 5

    Remove from the oven and let site for about 5 minutes before serving.
