Arróz a La Carmen – Carmen Style Rice
This recipe came from my father’s cousin’s wife Carmen. Tia Carmen was Puertorican from an area where they speak a little different. She was sweet, funny, and just knew tons of survival skills to teach a desperate woman who needed them. When we lived in Puerto Rico they took my mother and showed her the ropes. This was a rice you could make very easily that made it so it seemed way fancier without having to do too much extra work to it. I happened to love it so that was a win for my poor mother who was always trying to feed me.
Ingredients
- 1/2 cup chopped onion
- 1/2 cup chopped cabbage
- 1/2 cup chopped green peppers
- 1 can consome (Campbell’s)
- Around 1 tablespoon soy sauce
- 2 cups dry rice
- 1 1/2 cups water
This is a really easy and forgiving recipe. My mom used to make it all the time.
You can use regular chicken broth, specially organic.
Step by Step Instructions
Step 1
Heat up the oil and cook the onions, peppers, cabbage, salt and pepper.
Step 2
Add water, soy sauce and the consome.
Step 3
When it is boiling add the rice and stir.
Step 4
Let it boil uncovered until it starts to dry. Lower the heat and cover.
Step 5
Cook for about 20 minutes. Uncover and stir. Cover and cook a little bit longer, if it needs it.
Serve.
