Desserts

I wanted to cook desserts and make pastries since I was a kid. Watching my mother making eclairs, and cream puffs, birthday cakes, pineapple upside-down cakes, fruit cakes, napoleons, cake rolls, and much more made me want to cook too. By the time I was 10 I could make a birthday cake with frosting. By 18 I was making lemon meringue pies worthy of photographs. And I never stopped. Now, I cook for a diabetic husband, so it has been more about finding dishes that he can eat. The Flourless Chocolate Keto cake has become a favorite in our house. It is a rich dessert and yet, not really a cake. The Apple pie is also more like a breakfast food and not like a regular apple pie.
