Yautia – Malanga – Taro

Yautía, Malanga, or Taro, is the root of an Elephant Ear plant eaten in most of the Caribbean and in Hawaii. The roots which have rough brown shin and flesh ranging from white to grayish white can be used as potatoes. Peel, boil in salted water and eat. Mash like potatoes adding milk, butter, salt and pepper to taste. Or slice very thin and deep fry to make chips.
