Coconut Fish

El pescado en con coco es un plato de pescado que no es extraño en los lugares tropicales y costeros. Pero esta receta tiene un toque exclusivo Dominicano.

Coconut Fish is a dish that is not unusual in most tropical and coastal places. But, the seasoning makes this a Dominican Recipe. 

Coconut Fish, pescado con coco

Ingredients

  • 4 1/2 pounds snappers or red grouper
  • 2 bell peppers cut into strips (Or equivalent cubanelle peppers)
  • 1 tsp of crushed garlic
  • 1 tsp of powdered bija (annatto, achiote)
  • 4 cups of freshly extracted coconut milk
  • 2 tbsp of cilantro finely chopped
  • 4 tbsp of oil
  • 1 onion cut into strips
  • Salt

Step by Step Instructions

Step 1

Clean Fish. Score diagonal cuts on the fish about 1.5 inches from each other.

Step 2

Mix the garlic, bija and salt. Fill the cuts on the fish with the mixture, smear the remaining mixture all over the fish.

Step 3

Heat oil in a shallow pan (big enough to hold all 4 fish).

Step 4

Saute fish on one side until it starts to acquire a darker color, rotate and cook other side equally.

Step 5

Add the pepper strips and onion and sauté for a couple of minutes. Add coconut milk and coriander.

Step 6

Simmer over medium heat until the liquid reduces to half. Rotate the fish regularly. When the liquid has reduced adjust salt to taste and remove from the heat.

Serve hot.
