Adobo
Adobo is a staple of Latin – Caribbean cuisine. It is very easy to make so there is no need to buy store-bought which may contain preservatives or even Monosodium glutamate. It is just a simple combination of several wonderful spices and herbs to make a powerful seasoning.
Ingredients
- 1 tbsp ground coriander (the seed of the cilantro)
- 1 tbsp ground cumin
- 1 tbsp ground bija (anato, achiote) or turmeric
- 1 tbsp garlic powder
1 tbsp salt - 2 tsp oregano (I buy Dominican. It is a different plant than the Italian Oregano usually sold in the US.)
- 1 tsp ground black pepper

Step 1
In the top pot of double boiler, with a mixer at high speed, beat all ingredients with a 1/2 cup water* until blended, about 1 minute. Add all ingredients. Blend. That’s it. Use to season all your favorite Latin dishes.
A Simpler Version
Ingredients
- Onion Powder
- Paprika
- Garlic powder
- Oregano (preferably, Dominican Oregano)
- Salt and pepper
Step 1
Mix all the spices and keep in a jar for later use.
To make it into a marinade or sauce, the spices are mixed with vinegar to enhance it’s flavor and preserve it.
